Since the age of 4, Jerome has always wanted to be a pastry chef. Born in a family where the taste of cooking and good things are very present, he is passionate immediately for the pastry and the creativity that results. He enjoys the associations of perfumes, the play of textures, shapes, colors ... the unlimited wealth of gluttony!

Originally from Lyon, he made his apprenticeship: BEP, BAC PRO and BTM at the Ecole Nationale Supérieure de la Pâtisserie. He made his debut next to a big name, Sébastien Bouillet, Relais Desserts International. Wanting to progress with his idol, Jerome then gave himself the means to integrate the brigade of Christophe Michalak Plaza Athénée.

From competition to competition, Jerome proves that he loves the challenge and that it succeeds him since he won the World of Sweet Arts in 2007, and realizes his dream in 2009, becoming the youngest World Champion of Pastry at just 23 years old.

After 5 years at the Plaza, he left his position as sous chef in April 2011 and set himself a new challenge by moving to Cannes, then Monaco and Polygone Riviera to create the "Intuitions" bakery, an expression of his generosity. .

Gluttony is a source of inexhaustible happiness! That is his motto.

Beng Mealea or Bung Mealea

Its name means "lotus pond" is a temple in the Angkor Wat period : 118–119 located 40 km east of the main group of temples at Angkor, Cambodia, on the ancient royal highway to Preah Khan Kompong Svay.

It was built as a Hindu temple, but there are some carvings depicting buddhist motifs.

Its primary material is sandstone and it is largely unrestored, with trees and thick brush thriving amidst its towers and courtyards and many of its stones lying in great heaps.

For years it was difficult to reach, but a road recently built to the temple complex of Koh Ker passes Beng Mealea and more visitors are coming to the site, as it is 77 km from Siem Reap by road.

The history of the temple is unknown and it can be dated only by its architectural style, identical to Angkor Wat, so scholars assumed it was built during the reign of king Suryavarman II in the early 12th century. Smaller in size than Angkor Wat, the king's main monument, Beng Mealea nonetheless ranks among the Khmer empire's larger temples: the gallery which forms the outer enclosure of the temple is 181 m by 152 m. It was the center of a town, surrounded by a moat 1025 m by 875 m large and 45 m wide.

Beng Mealea is oriented toward the east, but has entranceways from the other three cardinal directions. The basic layout is three enclosing galleries around a central sanctuary, collapsed at present. The enclosures are tied with "cruciform cloisters", like Angkor Wat. Structures known as libraries lie to the right and left of the avenue that leads in from the east. There is extensive carving of scenes from Hindu mythology, including the Churning of the Sea of Milk and Vishnu being borne by the bird god Garuda. Causeways have long balustrades formed by bodies of the seven headed Naga serpent.

It was built mostly of sandstone: Beng Mealea is only 7 km far from the angkorian sandstone quarries of Phnom Kulen, as the crow flies. Presumably sandstone blocks used for Angkor were transported along artificial water canals and passed from here.

Despite of lack of information, the quality of architecture and decorations has drawn the attention of French scholars just from its discovery

WAIT – WHAT IS PCHUM BEN?

Pchum Ben is much more than simply the time when all your favourite drinking spots inconveniently close for a week. It is a unique and very Cambodian festival.

The celebration dates back to the Angkorian era when the dominant religion was Animism. Since then it has incorporated touches of of influence from both Animism and Buddhism as a festival which reflects the Khmer tradition of respect for your ancestors.

The first 14 days of the festival are known as the observed celebration or Kan Ben. The 15th and final day is called Pchum Ben day and is the time where monks are given gifts and candles.

The monks then recite a prayer and it is on this night that the village comes together for the night of celebration. After they have of course, dealt with all those ravenous ghosts.

The festival is in part, a time to feed hungry ghosts.

Four types of ghost are at play here. The kind that eats pus and blood, the forever hot burning ghost, and the Pakrakteaktopak Chivi, who can receive food through the monks over the festival period.

The other ghosts must reduce their level of sin before they can receive food.

It is customary to offer the ghosts bey ben, balls of sticky rice and sesame that are laid out before dawn.

The ghosts with heavy sins are understood to not be able to receive food during the day. Bay ben is made from sticky rice and sesame with some adding coconut cream for flavour.

So… What Happens ?

Now you understand the festival, remember that is a very important time people for Khmer culture so be patient that our beloved little city comes to a temporary stand still.

The beautiful temple in Siemreap Pre Rup

The Pre Rup was the state temple of King Rajendravarman II. It is a mountain temple build in the year 961, located just South of the large East baray and the East Mebon, another mountain temple build by Rajendravarman II just 9 years earlier.

In the early 20th century the Pre Rup had been completely overgrown and covered with soil. The temple was excavated during the 1930’s by French conservators George Trouvé and Henri Marchal.

Stepped pyramid representing Mount Meru

Its architectural style is very similar to that of the earlier East Mebon, the major difference being the stepped pyramid of the Pre Rup that is missing in the East Mebon temple. The laterite and brick structure represents the five mountain peaks of the sacred mountain Mount Meru, the center of the universe in Hindu mythology.

An inscription in the temple mentions that the five prangs were dedicated to Shiva (central tower and one of the surrounding towers), Vishnu, Parvati (the consort of Shiva) and Lakshmi (the consort of Vishnu).

The temple used to be surrounded by moats. There are two enclosures, each with a gopura entrance gate at the center of each side. Between the outer and inner enclosure were long halls of which not much remains today. They were a predecessor of the galleries seen in later temples.

6 large towers to the East

Most striking feature of the Pre Rup temple are the three large towers on either side of the Eastern entrance, the main entrance of the temple. The first tower to the right of the entrance is missing, although the base is there. The tower was either never build or demolished and the stones used elsewhere later. The towers were probably build later during the reign of the next King, King Jayavarman V.

The central tower contains a sanctuary room. The lintels contain Indra riding the elephant Airavata, Vishnu on Garuda (a large mythological bird, the mount of Vishnu) and other depictions.

Inner enclosure

Just past the Eastern gate of the inner enclosure are two large libraries, one on each side of the entrance that probably contained Hindu statues. Between the two libraries is a three meter long structure, that likely served as a pediment for a statue, possibly of Nandi, the sacred bull and mount of Shiva. In the North East corner of the inner enclosure is a small laterite building that has been restored.

JOEL ROBUCHON- The emblematic chef of French haute-cuisine, Joël Robuchon died on Monday, August 6th at the age of 73. It leaves a culinary heritage recognized around the world but also the memory of a demanding man and jealously keeping the secret on his business and his private life

The most starred chef in the world, named "cook of the century" in 1990, Joël Robuchon died Monday at the age of 73, a few months after the disappearance of another monument of gastronomy,

The great French chef has succumbed to pancreatic cancer in Geneva, where he planned to open a restaurant, we learned from his friend, the food critic Gilles Pudlowski, confirming information Le Figaro.

"He's a genius at the same time, and also a guy who does great things, he dared to cook things that were not considered noble", including his famous mashed potatoes, said Mr. Pudlowskiabout the chef, also known by his shows on television.

"His stars shine brightly," said Emmanuel Macron. Government spokesman Benjamin Griveaux hailed a "visionary leader" who "shone the French gastronomy" from Paris to Shanghai.

The leader with an absolute record of Michelin stars (32 at the height of his career, 24 at his death), who was very discreet about his illness, was at the head of an empire of 26 institutions worldwide .

This star of gastronomy, who preferred to dress in black rather than white to cook, orphans the world of gourmets, already touched earlier this year by the death of Paul Bocuse and the one in June of the American Anthony Bourdain, face of universal gastronomy.

Born on April 7, 1945, in Poitiers, Mason's son, Joel Robuchon thought first to enter the orders before becoming apprentice then companion, an experience which he will keep the taste of the transmission, forming many leaders.

Puree, its dish

The signature dish of this great chef, who created an empire with more than 1,200 employees around the world and was passionate about Japan, was his mashed potato.
